Chocolate PB2 And Fruit Sweet Potato Toast

Yes, you read that correctly. Sweet. Potato. Toast. This is one of my favorite go-to breakfasts and it's so much easier to make than you can imagine. The toppings options are also endless, and you can make it sweet or savory (or both!). 

Note that I use a toaster oven for this, but you can also use a standard toaster. For this recipe, I use Chocolate PB2, but if that's not your thing, you can always just use regular peanut butter or hazelnut spread. I use Chocolate PB2 because it's low-calorie, low-fat, and tastes pretty damn good. For those who don't know, PB2 is powdered peanut butter, and all you have to do is mix 2 tbsp of the powder with 1 tbsp of water, and it comes out just like peanut butter (but less sweet than your average Jif or Skippy's).

Servings: 1

Ingredients: 

  • Spray coconut oil
  • 1 raw 5 oz sweet potato (4 SmartPoints)
  • 2 tbsp Chocolate PB2 (1 SmartPoint)
  • 1 tbsp water
  • 1 tsp honey (1 SmartPoint)
  • 1/4 cup strawberries
  • 1 small banana
  • 1/4 tsp ground cinnamon

Directions:

  1. Wrap a small pan with aluminum foil and coat with spray coconut oil
  2. Wash and cut one raw sweet potato vertically into four slices (leave skin on)
  3. Sprinkle a bit of cinnamon on each side of the sweet potato slices 
  4. Place in the toaster oven and toast on the medium option (not too light or dark)
  5. Once done, flip the sweet potato slices and toast again
  6. Repeat two more times or until soft (each side of the sweet potato is toasted twice)
  7. Mix 2 tbsp of Chocolate PB2 and 1 tbsp water to make chocolate peanut butter, and spread among the four sweet potato slices
  8. Top with fruit, a sprinkle of cinnamon, and drizzle honey

If you are using a regular toaster, you can still cut the sweet potato into four slices and just pop them in as is in the toaster, flipping 2-3 times or until soft. I would also lightly coat the slices in spray coconut oil and cinnamon so it cooks a little better.
