Smoked Salmon Cucumber Bites

Smoked. Salmon. This is one of my favorite meals, and it's so incredibly healthy too. It's low-carb, has healthy fats, and is beyond refreshing. This dish is also perfect for a summer potluck or cookout! Bring these to a party and I promise they'll vanish.

Smoked Salmon Cucumber Bites

Servings: 1

Ingredients: 

Directions:

  1. Wash and cut cucumber into small "rounds"
  2. Lay them on a plate and pat down slices with a paper towel to make it more dry
  3. Spread one cheese wedge evenly between half the cucumber rounds (only the bottom of the "sandwiches")
  4. Top each cheese round with capers (as many as you want) and smoked salmon
  5. Then add the other half of cucumbers on top of the salmon to make a sandwich and secure with a toothpick
  6. Add salt, pepper, and host sauce to taste
  7. Serve with Enlightened Broad Beans if desired

And that's it! I make these at work all the time and people always compliment me on how good it looks. Healthy eating can be fun, guys! ;)
