Apple Avocado Zoodle Bowl

The only thing more fun than saying "zoodles" is eating zoodles. If you don't know what that is, it's just a spiralized zucchini that is often used in place of pasta. There are so many variations of it now these days, that you could find at least 100 recipes on Pinterest. And the best part of this low-carb substitute is that you can eat it cooked or raw — whatever your heart desires!

For reference, I make my zoodles with the four-blade Paderno Spiralizer, which you can easily purchase on Amazon. I use the biggest blade (far left in picture below) to make the zoodles, but you can use the smaller blades too if you want.

Apple Avocado Zoodle Bowl

Servings: 1

Ingredients: 

  • 1 large raw zucchini
  • 1 small apple
  • 1/2 hass avocado (4 SmartPoints)  
  • 1/4 cup edamame beans (1 SmartPoint, 0 SmartPoints on Freestyle)
  • Salt and pepper to taste 
  • Lemon juice (optional)
  • Frank's Buffalo Sauce (optional)

Directions:

  1. Wash zucchini and cut off both ends of the squash
  2. Use a spiralizer to make zoodles and place in a bowl
  3. Add sliced apples, edamame, avocado, salt and pepper, and mix up
  4. Add lemon juice or buffalo sauce as a dressing if you wish!
