Turkey, Peach, And Avocado Sandwich

Hi friends! It's been a while since I've published anything. I went to the hospital again this week and have been generally too emotionally drained to update. I'm slowly trying to introduce some foods I've been avoiding to see how my body reacts — one of which is avocado. I haven't had an attack yet, so that's a good sign! ANYWAY, a recipe I tried this afternoon was inspired by Self Starter (a monthly meal plan that provides healthy recipes). I love sweet + salty combos, so this was a perfect lunch for me.

Turkey, Peach, And Avocado Sandwich

Servings: 1

Ingredients: 

  • 2 slices of Ezekiel or wheat bread (4sp)
  • 3 oz avocado (3sp)
  • 2 oz cajun turkey (1sp, 0sp on Freestyle)
  • 1 peach, thinly sliced
  • 1/4 Squeeze of lime juice
  • Salt and pepper to taste

Directions:

  1. Scoop avocado flesh into a bowl and mix with lime juice, salt, and pepper
  2. Toast bread, spread with avocado, then add turkey and sliced peaches
  3. Sprinkle with salt and pepper to taste
